Yummy melt in the mouth treats…


True to its name, these Almond melting moments are melt in the mouth sweet delights. Yummy spongy almond squares.

Of all the almond recipes that I’ve shared, this one is definitely my favourite. With Dussehra round the corner, I wanted to try out something different from the normal gulab jamun, carrot halwa or mysore pak….the ones I normally make. N…. it hit the right chord with everyone at home. This one definitely goes down on my list of quickie favourite desserts.

Almond melting moments recipe

Ingredients:
(Have taken 1cup=250 ml)

  • Unsalted Butter – 115 gms.
  • Almonds – 80 gms.(Peeled)
  • Milk powder – 1 1/2 cups
  • Sugar – 1 cup
  • Eggs – 3 Nos.
  • Saffron – 1/4 tsp.
  • Almond essence – Few drops

Method:

  • Blitz the almonds along with sugar to a smooth lump-free texture.
  • Add this to a mixing bowl along with milk powder, saffron and mix well.
  • Now take butter in a bowl and melt using double boiler.
  • Add this melted butter to the dry ingredients in the mixing bowl and combine.
  • Whip eggs separately in a bowl along with almond essence, until frothy.
  • Pour the whipped eggs into the above mix and whisk.
  • Now take a square cake tin and grease all around with butter.
  • Pour the prepared batter into the greased cake tin.
  • Bake in a pre-heated oven at 160C till the top layer appears caramelized or slightly golden in colour approx. for about 1 hr./ a skewer inserted into the middle of the cake comes out clean.

Note:

  • Blitzing the almonds with granulated sugar helps in easily grinding the almonds and also prevents the almond powder from getting warm.
  • To peel the almonds, put them in rapidly boiling water for exactly 1 min. Transfer immediately to a strainer and clean under running water. By now the peel of the almonds would have got shriveled. Remove the peel and spread on a muslin cloth till the almonds completely dry out. Once dried, these are ready for blitzing.
