Chocolate syrup coated butterscotch brownie bars/cupcakes

Yet another yummilicious recipe which could be that one answer to all your chocolate desires – Spongy sticky butterscotch brownie bars. The butterscotch adds a sticky toffee touch to the spongy chocolatey brownie bars.

So without further ado lemme get down straight to the recipe for the delectable Chocolate syrup coated butterscotch brownie bars/cupcakes. 🙂

Chocolate syrup coated butterscotch brownie bars/cupcakes

Ingredients:

Brownie

  • Dark Chocolate- 125 gms.
  • Unsalted butter – 125 gms.
  • Caster sugar – 175 gms.
  • Eggs – 3 nos.
  • Vanilla essence – 1 tsp.
  • All purpose flour – 75 gms.
  • Salt – A pinch
  • Butterscotch chips crushed – 100 gms.

Chocolate syrup:

  • Sugar – 70 gms.
  • Chocolate chips – 75 gms.
  • Cocoa powder – 1 tbsp.
  • Water – 100 ml.

Method:

Brownie

  • Melt dark chocolate in a double boiler.
  • In the same melted hot chocolate melt the butter.
  • Whisk till this concoction becomes smooth.
  • In a mixing bowl take eggs and add vanilla essence to it.
  • Whip till the volume of egg doubles.
  • Add caster sugar and continue whipping.
  • To this add the chocolate-butter concoction.
  • Whip to combine.
  • Add the flour and salt to the mix and fold the batter.
  • Once well combined without any unmixed flour remains in the batter, pour into a greased and dusted baking pan/ lined muffin cups if making brownie cupcakes.
  • Spread all the crushed butterscotch chips on top.
  • Bake at 180C for 25-30 mins./ till a skewer inserted in the middle of the brownie comes out clean.

Chocolate  syrup

  • Bring water to boil.
  • Add chocolate chips, cocoa powder and sugar to the boiled water.
  • Whisk till well combined and reduce till the syrup thickens.
  • Bring the chocolate syrup to room temperature and refrigerate in airtight container.

Cut square shapes from the brownie with a cookie cutter. Pour the chocolate syrup over the butterscotch brownie bars/cupcakes and serve immediately.

Note:

  • It is preferable to use glass bowl for melting the chocolate in the double boiler. Take very little water in the base pan keeping it at just about 1 inch from the base of the pan. Take care to see that the simmering water doesn’t touch the bottom of the chocolate loaded glass bowl.
  • The chocolate syrup could be made beforehand and kept refrigerated. Pour the Chocolate syrup over the brownie bars/cupcakes at the time of serving.

  1. Bring water to boil and add cocoa powder, chocolate chips and sugar to it.

  3. Chocolate syrup coated butterscotch brownie bars/cupcakesReduce till it takes a thick syrupy form.
