Peanuty cashew goodness in every bite…

Yet another crispy cookie that could make your tea break yummier. Loaded with peanuts and cashews, this is a rich cookie and a very good option to carry on picnics.

Another vacation stretch coming up n I was on the look out for small treats to carry home. Had a half used jar of Chunky peanut butter…so thot y not use it for making cookies. N thus turned out Chunky peanut butter cashew cookies.

Easy to bake with very little prep., these yummies are definitely worth a try.. happy baking.

Chunky peanut butter cashew cookies recipe

Ingredients:
(Have taken 1cup=250 ml)

  • Unsalted butter – 115 gms.
  • Chunky peanut butter – 115 gms.
  • Caster sugar – 1 cup
  • All-purpose-flour – 1 cup
  • Cashew nuts – 50 gms.
  • Baking powder – 1/2 tsp.
  • Baking soda – 1/8 tsp.
  • Vinegar – 1/8 tsp.

Method:

  • Take cashews in a non-stick pan and dry roast.
  • Roughly chop the roasted cashews and keep aside.
  • Take softened unsalted butter and chunky peanut butter in a mixing bowl.
  • Whip to a creamy consistency.
  • Add caster sugar and further whip till soft and fluffy.
  • Sieve in the flour, baking powder, soda and vinegar to the base.
  • Give a quick whip to bring the batter together.
  • Further whisk well.
  • Add the roasted cashews and combine with your fingers to get a soft and sticky dough.
  • Refrigerate the cookie dough for abt. 30 mins.to an hour.
  • Make small balls from the dough and slightly flatten.
  • Place the flattened cookie balls with sufficient space on the cookie sheet / baking tray and bake at 180C for 25-30 mins./ till the cookies are golden in colour.
  • Serve when completely cool to get crisp and melt in the mouth cookies.

Note:

  • The prepared cookie dough will be sticky. So refrigerate the dough till it feels not sticky and workable.
