There will be instances when you check the snack boxes in your pantry and figure out there’s hardly anything to munch on. You would be surprised if I say it’s the same scenario in my kitchen, even after all the quick bites and sweet dishes that I so frequently make. It’s just that I make very little quantity of everything so that nothing gets wasted n is just sufficient for one round of home supply. I often have to dunk from those “y so little” eye rolls n stares… πŸ˜› πŸ˜›

Hence, most of the time when there’s someone coming over, I end up filling my pantry jars with bakery supply. πŸ™ πŸ™ So this time around, when my kiddo’s mates were planning a visit home, I decided to make Choco chip muffins, that are super easy to make n so…..tough to resist. πŸ˜‰

So here goes the recipe for Easy Choco chip muffins. Enjoy…..

Easy Choco chip muffins recipe

Prep time: 15 mins.; Cooking time: 35-40 mins.
Makes: 10 muffins

Ingredients:

  • All-purpose-flour – 100 gms.
  • Salted butter – 100 gms.
  • Caster Sugar – 110 gms.
  • Choco chips – 60 to 80 gms.
  • Egg – 2 Nos.
  • Cocoa powder – 10 gms.
  • Milk powder – 2 tsp.
  • Baking powder – 1 tsp.
  • Vanilla essence – 1 tsp.

Method:

  • Sift the dry ingredients i.e. flour, cocoa powder, milk powder n baking powder and keep aside.
  • Take soft butter in a mixing bowl and cream till light and fluffy.
  • Add caster sugar and whip till well combined.
  • Gradually add eggs with vanilla essence and continue whipping.
  • To this slowly add in the sifted dry ingredients.
  • Give a quick whip to bring the batter together. Further fold the batter to incorporate any floury remains.
  • Add Choco chips and fold using spatula.
  • Once the mix is of uniform colour, pour the batter into lined muffin mould.
  • Bake at 180C for 25-30 mins./ till a skewer inserted comes out clean.
