Easy vanilla lemon bites

Of all the cake recipes that I’ve shared, there are very few cupcake recipes. N when I do make them at home, it normally is in a hurry n I wouldn’t be in a mind to photograph them. So finally here is an easy to bake no hassle Eggless Vanilla lemon choco chip cupcake that I recently baked for a small party.

It’s December, the month of festivities n celebrations world over. The season of get-togethers, parties, family n friends time. It’s also that time of the yr. when extensive travel plans are on the cards for many. Food definitely becomes an integral part of all such celebrations n fun time. Eggless Vanilla lemon choco chip cupcake Recipe
Ingredients:
(Have taken 1cup=240 ml)

  • Oil – 1/4 cup
  • Milk – 3/4 cup
  • Caster sugar – 1/2 cup
  • All-purpose-flour – 1 1/4 cup
  • Choco chips – Fistful
  • Lemon zest – 1 tbsp.
  • Vanilla essence – 1 tsp.
  • Baking powder 1 tsp.
  • Baking soda – 1 pinch
  • Vinegar – 1/4 tsp.

Method:

  • Take oil in a mixing bowl and combine with milk.
  • Add caster sugars along with vanilla essence and give a thorough whisk.
  • Sieve in the flour along with baking powder.
  • Give a quick mix and smoothen out the floury remains in the batter.
  • Mix in Choco chips, lemon zest and combine with the batter.
  • Now add baking soda and vinegar to the batter.
  • Immediately mix this with the batter thoroughly.
  • Pour the batter into cupcake liners filling them up to almost 3/4.
  • Bake in a pre-heated oven at 180C for 15-20 mins./ till a skewer inserted comes out clean.

Note:

  • I have used zest of 2 medium sized lemons here. While shaving the zest, take extra care to not add the white skin beneath the yellow surface of the lemons, as this will impart a bitter taste to the cupcake.
  • Vinegar is what gives fluffiness to the cake. So do not skip this magical ingredient.
