Yummy Indian dessert – Lauki halwa

Yet another favourite dessert – The Lauki halwa. It’s just a couple of simple ingredients that goes into making this yummy dessert. For making this halwa, have adapted the same method used for making Carrot halwa.

So make your dessert time delicious with this simple and quick cook Lauki halwa. Here goes the recipe –

Lauki halwa recipe

Ingredients:

  • Lauki – 250 gms.
  • Milk – 500 ml.
  • Ghee (Clarified butter)- 2 tbsp.
  • Sugar – 7 tbsp.(Adjust as per taste)
  • Saffron – 1 pinch
  • Cardamom – 1 no.
  • Cashews – Handful (For garnishing)

Method:

  • Take milk in a sauce pan and bring to boil.
  • Simmer the milk till the quantity reduces to about 250-300ml. and keep this aside.
  • Take another wide thick bottom non-stick pan and add ghee to it.
  • Add lauki to the ghee and roast for a couple of minutes.
  • Pour in the reduced milk, saffron and simmer till the milk bubbles and the lauki is well cooked in the milk.
  • Continue stirring and cooking till almost the entire milk is infused into lauki.
  • Add sugar, cardamom and stir for about 5 more minutes till the Lauki halwa starts separating from the pan.
  • Transfer to a serving bowl and garnish with roasted cashew nuts.

Note:

  • Add sugar starting with 5 tbsp. and increase further depending upon the sweetness required. As the halwa thickens the sweetness also increases.
