Soft spongy Tea cake

Takes me back to my first cake-memories; this being one of the first “cake with a difference” I ever tasted. Offered by my friend’s mom at his place, I was amazed by the combination of white and black in a single slice. Took a bite to check if the pattern continued, n of course it did. 😛 😛 At a time when vanilla was the only readily available variety of cake, this one was a complete surprise to me.

These days Marble cake has become so common that you would be able to find it in almost every other bakery – Or has it come n gone…I don’t know. Nyways nothing fancy about it any more unlike those days when it was first introduced from the German land into our cake loving country. All said, I still happen to love this cake the same way I loved it the first time tasted it.

Finally after many trials and errors, zeroed in on this recipe that gave me almost the same spongy yumminess I experienced the first time I savored this cake. So here’s my favourite version of the comforting Marble tea cake. Hope you guys enjoy it too.

Marble tea cake recipe

Ingredients:

  • Unsalted butter – 75 gms.
  • All-purpose-flour – 70 gms.
  • Powdered sugar – 75 gms.
  • Cocoa powder – 7 gms.
  • Eggs – 2 nos.
  • Milk powder – 1 tsp.
  • Baking powder – 1 tsp.
  • Vanilla essence – 1 tsp.
  • Salt – A pinch

Method:

  • Take softened butter in a mixing bowl and whip till creamy.
  • Add sugar to the butter.
  • Whip till the mix gets fluffy.
  • Add eggs and vanilla essence into butter-sugar mix.
  • Whip till all wet ingredients are well incorporated into the batter.
  • Sieve in the dry ingredients flour, milk powder, baking powder and salt to the wet batter.
  • Give a quick whip and fold the flour mix into the cake batter.
  • Once the batter is smooth and creamy, transfer 1/4th of the batter into another bowl.
  • Take the cocoa powder in a small bowl and dilute in a little water.
  • Add the cocoa liquid into the separated batter and mix uniformly.
  • Now take a square cake tin and line with butter paper.
  • Pour the 3/4th vanilla cake batter into the cake tin and tap well to form an even layer.
  • Pour the cocoa mix over the vanilla base in the center.
  • Take a skewer/spatula and run through the batter to get a marble pattern.
  • Bake at 180C for 20-25 mins./ till a skewer inserted into the center of the cake comes out clean.
  • If baking in a cooker, pre-heat the cooker at the lowest heat for 10 mins., n then bake the cake for about 35-40 mins.- wherein the first 10 mins. the heat should be  maximum and hence reducing to medium flame for the remaining baking time.
