Mascarpone Icecream n cashew praline

Easy cheesy ice-creamy delight…yumm..

It’s holiday season, and time to head hooooooome…..yay….:D:D. Still a week to go n m on a cleaning spree, for I might find certain half used/unused goodies tucked in some corner, that could go stale by the time I get back. N guess what I did find finally…a pack of frozen unused Mascarpone cheese that I had bought when the summer kicked in. My original plan was to make a Mango cheese cake, for which I had stacked the cream cheese, but the idea somehow slipped my mind.

Now, with no Mangoes at home, n creamy cheesy Mascarpone handy, I had to do something heroing it. So…wat else could be better that the luscious Mascarpone Icecream n cashew praline.

This is an eggless version of the Mascarpone Icecream and the way I do it at home. So…here goes……

(Have taken 1 cup=250ml)

  • Mascarpone cheese – 150 gms.
  • Milk – 1 cup
  • Whipping cream – 1/4 cup
  • Sugar – 1/2 cup
  • Custard powder – 2 tbsp.
  • Honey – 1 tbsp.(optional)
  • Vanilla essence – 1 tsp.

  • Sugar – 4 tbsp.
  • Cashew – 25 gms.

  • To make Praline, dry roast the cashews and keep aside.
  • Take sugar in a pan and heat till the sugar caramelizes and gets lightly golden in colour.
  • Add cashews to the sugar syrup and give a quick mix.
  • Immediately pour this over a plain surface and let it cool completely.
  • Meanwhile for the Icecream, take 1/2 cup milk in a sauce pan.
  • Add sugar, custard powder and whisk.
  • Keep on heat and keep whisking to remove all the lumps.
  • When the custard is lumpfree and slightly thicker in consistency, keep the sauce pan aside.
  •  Take another non-stick pan and add Mascarpone cheese to it.
  • Try to smoothen out the cheese and then add the remaining 1/2 cup of milk along with vanilla essence.
  • Once well combined and smooth, add honey and mix.
  • Add this to the custard and whip to get a smooth creamy texture.
  • Keep aside till it cools to room temperature.
  • Take whipping cream in another bowl and whip till it holds stiff peaks.
  • Add the whipping cream to the cooled icecream base and fold to get a uniform mix.
  • Now add the scraped out cashew praline bits to the icecream and mix.
  • Transfer to an Icecream tub and freeze till it sets.

Note:

  • While making praline, it’s important to immediately add the cashews to the sugar caramel and spread on to a plain surface. The longer it takes to pour out the caramel, it will get stiff and turn into an unpourable consistency.
  • This is a creamy Icecream, so don’t worry if it does not set completely.
  • Instead of mixing praline with the Icecream base, you could sprinkle it over the top of the Icecream after pouring it into the tub before freezing.
