Yummy moist gluten free cake

I am a cake lover and love experimenting with different flavours and combinations. Although I have tasted various types of fruit cakes, they were never on my list of favorites, since it’s not considered advisable to bind together certain fruits and dairy in a single dish. This esp. holds valid for citrus fruits, as its acidity can cause adverse reactions when used in combination with milk or milk products like butter.

So here’s an Orange n almond cake, that is not just butter free, but also gluten free as no flour is used in making this cake. Surprised…. 😉 …Yes this is a flourless cake, which happens to be moist and soft even in the absence of butter or flour. When I saw this recipe on tv the other day, I was really skeptical. Gave it a go, n was super happy with the outcome. A cake I can safely n happily pack in my kiddo’s snack box.

An easy recipe that has descended down the Jewish lanes, super rich n yet light on the tummy. Do not panic seeing the large no. of eggs used, as this is what gives fluffiness and moistness to the cake n definitely no eggy after-taste.

Moist gluten free orange n almond cake

Ingredients:

  • Orange – 2 Nos.
  • Almond meal – 250 gms.
  • Eggs – 6 Nos.
  • Caster Sugar – 250 gms.
  • Baking powder – 1 tsp.

Method:

  • Clean the Oranges and add this to a pressure cooker with sufficient water.
  • Give 3 to 4 whistles or till the orange is well done, soft and the peel almost separates from the pulp.
  • Now blitz the orange (including the peel) in a mixer and keep aside.
  • Add the dry almonds into a mixer jar and grind to make almond meal.
  • Take eggs in a mixing bowl and whip till frothy.
  • Mix in the pulped orange and continue whipping.
  • To this add caster sugar and whisk till well incorporated.
  • Slowly add almond meal and baking powder to the wet batter.
  • Give a quick whip and then fold almond meal completely into the batter.
  • Make a cake tin ready by lining with butter paper.
  • Transfer the cake batter into the lined cake tin.
  • Bake in a pre-heated oven at 160C for about 1 1/2 hrs./till a skewer inserted into the middle of the cake comes out clean/the crust appears evenly golden in colour.
  • Once done, let the cake cool completely before de moulding. Or else, the cake would break apart n not evenly come out of the tin.
