Nutty oat honey bars

Hearty n healthy breakfast bars

The last couple of weeks of December was fun and at the same time pretty hectic. My lo was having his Christmas hols. and which without mention meant his incessant kitchen visits. 😀 There are few jars in my pantry, that are not off limits to him, and those needed to be filled to keep up the holiday season. I had to make something snacky, at the same time nutritious n filling to keep his hunger pangs at bay, n thus made these Nutty oat honey bars.

I have used Almonds here, which could be replaced with any favourite crunchy nut variant like cashews, pistachios, hazelnuts or a combination of these. Also honey could be replaced by corn syrup or maple syrup, although the former is a healthier option.

So y not pack ur boxes with these healthy “Nutty oat honey bars” for those mid-morning/evening breaks or when on long drives. Say yes to snacking  ;D  ;D

Nutty oat honey bars recipe
Ingredients:
(Have taken 1cup=240 ml)

  • Butter – 115 gms.
  • Rolled Oats – 2 1/2 cups
  • Almonds chopped – 3/4 cup
  • Brown sugar – 1/2 cup
  • All-purpose-flour – 6 tbsp.
  • Honey – 3 tbsp.

Method:

  • Place butter in a double boiler and melt completely.
  • Add sugar and remove the bowl from the double boiler.
  • Whisk to dissolve the sugar completely in the melted butter.
  • To this, add in in the oats, almonds, flour and honey.
  • Mix thoroughly to get an even semi-dry dough.
  • Prepare a squares cake tin by greasing with butter all around.
  • Transfer the prepared dough into the cake tin, spread and smoothen out the surface using the back of a spoon.
  • Bake in a pre-heated oven at 180C for 20-35 mins./ till the surface appears golden and feels firm to touch.

Note:

  • Continue baking till the top appears golden and is pretty firm to the touch, as this is what gives a crunchy bite to the bars. As no liquid is used in this recipe, it’s important to give enough baking time for the flavors to develop.
