Crunchy Oatmeal nibbles

Here is a cookie I love to fill the jars in my pantry with – Crunchy Oatmeal flax seed cookies. Biting into one of these, you never realize there is a part of oats that has gone into it. Also the toasted flax seeds impart a beautiful earthy aroma and flavour to the cookie.

Oatmeal flax seed cookies recipe

Ingredients:
Prep time: 15 mins.; Cooking time: 20-25 mins.
Serves: 30 cookies

  • Butter – 110 gms.
  • Powdered sugar – 120 gms.
  • All-purpose-Flour – 70 gms.
  • Oats – 80 gms
  • Wheat flour – 30 gms.
  • Flax seed – 1 tbsp.
  • Baking powder – 1/2 tsp.
  • Baking soda – 1/2 tsp
  • Nutmeg – A pinch
  • Vanilla essence – 1/2 tsp.

Method:

  • Take flax seed in a non-stick pan and dry roast till it crackles. Keep the toasted flax seeds aside.
  • Cream the butter till it gets light and fluffy.
  • Add powdered sugar, vanilla essence and further whip till it gets whitish and creamy.
  • Sieve in the flour, wheat flour, baking soda and powder to the fluffy butter-sugar mix.
  • Give a quick mix to incorporate the dry ingredients to the batter.
  • Now add in oats, toasted flax seed and nutmeg into the batter.
  • Knead the dough and round it. It doesn’t matter if the dough is a little dry.
  • Roll the dough and cut out shapes with a cookie cutter.
  • Bake at 160C for 20-25 mins./till the cookies turn pale yellowish in colour.

Note:

  • If the dough is sticky, refrigerate for a couple of minutes before rolling out.
  • If the dough turns out a little dry and tough to roll out, the way mine turned out, spread out the dough with ur palms.
  • Try adding toasted melon seeds and sesame seeds to get a different version of this nutty cookie.
  • Try substituting half of the powdered white sugar with brown sugar for a more intense flavour.
