Plum cake

Yummy Christmas delight…

Today’s recipe is of a rustic cake, that reminds me of Christmas during school days – The Plum cake. It was that time of the year when we used to get our regular supply of home made Plum cake and other Christmas delicacies by my dear friend’s mom. Aunty’s Plum cake was a big time hit with everyone at home.

So while going on vacation to my home town, thought of making this spl. cake this time around. This Plum cake is a take on those cake memories from my childhood. I have done certain additions n omissions to suit my palette. So here goes the recipe for traditional Christmas Plum cake…

Plum cake recipe

Ingredients:

(Prep time: 30 mins.; Cooking time: 40 mins)

Cake

  • Flour – 120 gms.
  • Unsalted butter – 115 gms.
  • Powdered sugar – 90 gms.
  • Milk powder – 1 tsp.
  • Baking powder – 2 tsp.
  • Cinnamon, cardamom, cloves powder – 1/4 tsp.
  • Pepper powder – 1/4 tsp.
  • Ginger powder – 1/2 tsp.
  • Lemon rind – 1/4 tsp. (Optional)
  • Eggs – 3 nos.
  • Dry fruits – 150 gms. (raisins(rum soaked), dates, cashews)
  • Black caramel – 45 ml.
  • Vanilla essence – 1 tsp.

Black caramel

  • Sugar – 1/4 cup( 1cup=250 ml)

Method:

  • To make black caramel, take sugar in a sauce pan.
  • Heat the sugar till it dissolves and gets black.
  • Now add little water and stir till the water evaporates.
  • Take the pan off heat and add little more water to get a black caramel in running consistency.
  • Store in a clean jar refrigerated, till the time to use.
  • Soak the raisins in rum for at least 3-4 days.
  • Whip the butter till light and fluffy.
  • Add powdered sugar and beat well.
  • Slowly add in the eggs and vanilla essence.
  • Whip till the batter gets creamy.
  • Add in the black caramel and combine.
  • Now sieve in all the dry ingredients flour, garam masala powder, pepper ginger powders, milk powder n baking powder to the wet batter.
  • Give a quick whip with the beater and then combine with spatula.
  • Finally add the dry fruits and the remaining rum (not compulsory)into the cake base.
  • Pour into a greased and dusted/ butter paper layered baking tin.
  • Bake in a pre-heated oven at 180C for 30-35 mins./till a skewer inserted into the middle of the cake comes out clean.

Note:

  • Addition of Rum is not compulsory. Also you could use plain raisins without soaking in Rum. Alcohol gives an additional sharpness to the flavours in plum cake.
  • I haven’t used lemon rind, since I have used lemon flavored Rum.
  • Black caramel could be made in large quantities and kept refrigerated for a long time. Here I’ve made only what is sufficient for this recipe.

Recipe steps:

  1. Let’s begin by dunking our raisins in Rum. Let this soak at least for 3-4 days.
  2. Plum cakeTo make black caramel, take 1/4 cup sugar in a sauce pan.
  3. Plum cakePlum cakeCaramelize sugar on the lowest heat, till it gets black in colour.
  4. Plum cakePlum cakePlum cakeWhen it gets black add a little water. (Be very careful at this stage, as the water tends to splutter and might cause burns.). Let the water bubble away.
  5. Plum cakePlum cakeAdd little more water, boil and then take the pan off heat. Pour into another container and bring to room temperature. Once cooled, store in an airtight jar refrigerated, till further use.

  7. Plum cakeTake unsalted butter in a mixing bowl and whip till fluffy.
  8. Plum cakePlum cakeAdd powdered sugar and further whip till it gets whitish and creamy.
  9. Plum cakePlum cakeAdd eggs and vanilla essence and beat well.
  10. Plum cakePlum cakePlum cakeTo this, pour in the black caramel and combine.
  11. Plum cakePlum cakeSift the dry ingredients flour, garam masala, pepper n ginger powders, milk powder n baking powder into the batter.
  12. Plum cakePlum cakePlum cakeGive a quick whip and mix well with a spatula.
  13. Plum cakePlum cakeTo this add all the dry fruits. Combine with the cake batter.
  14. Plum cakePlum cakeWhisk everything well and transfer the cake batter into a butter paper lined cake tin.
  15. Plum cakeBake in a pre-heated oven at 180C for 30-35 mins./till a skewer inserted into the middle of the cake comes out clean.
  16. Plum cakePlum cakeServe the warm Plum cake with a hot cup of tea.
