Steamed banana rice cake

Make your snack time nutritious with this banana delight?

Now this one could go very well as a breakfast item or as a tea time snack. The coconut milk and jaggery that goes into making this cake imparts a beautiful flavor to it. 

Here’s yet another recipe heroing my all time favorite fruit “the banana” that happens to be in supply all round the year. So why not give a healthy twist to your snack time with this steamed banana rice cake.

Steamed banana rice cake recipe

Prep time: 10 mins; Cooking time: 25 mins.

Ingredients:

( Have taken 1 cup=240 ml.)

  • Banana ripe – 3 nos. ( I have used Robusta banana )
  • Rice flour – 3/4th cup
  • Jaggery – 1 cube (Adjust acc. to the sweetness needed)
  • Coconut milk – 1 cup
  • Salt – A pinch 
  • Kesar – Few strands

Method:

  • Take coconut milk in a sauce pan.
  • Add kesar and slightly warm up the coconut milk on the lowest heat.
  • Take the sauce pan off the heat and keep aside.
  • Grate the jaggery cube into a bowl.
  • Pour a small amount of the hot coconut milk over the grated jaggery.
  • Mix well to dissolve  jaggery completely in the coconut milk.
  • Strain this jaggery soln. into the remaining coconut milk in the sauce pan.
  • At this stage you could check the sweetness and add more jaggery if required.
  • Now slowly add in the rice flour and salt to the jaggery infused coconut milk.
  • Give a good whisk to get a lumfree batter.
  • Keep this on heat and continue stirring till the soln. thickens.
  • Take off the heat and keep aside.
  • Take the peeled bananas in a bowl and mash well.
  • Add the mashed bananas into the hot rice flour batter and combine.
  • The batter would be lumpy due to the addition of bananas.
  • Take a cooker/steamer and fill with enough water required for steaming.
  • Cover the steamer and keep this on heat and bring the water to boil.
  • Pour the batter on to idli moulds and steam for 25 mins.
  • Serve hot.
