Tiramisu

Here’s an Italian sweet treat one can hardly resist. Spongy n cheesy with an oozy center, a divine indulgence loaded with coffee n cream. A delicacy which till recent times, confined to the kitchens of fancy restaurants, have slowly started finding its place in home kitchens.

A must have for all coffee lovers, here’s an easy recipe for creamy Tiramisu.

Tiramisu recipe

Ingredients:

  • Sponge cake – 150 gms.
  • Mascarpone cheese – 110 gms.
  • Whipping cream – 100 gms.
  • Instant coffee powder – 2 1/2 tbsp.(1tbsp. for coffee           paste & 1 1/2tbsp. for coffee syrup)
  • White Sugar – 60 gms.
  • Caster sugar – 60 gms.
  • Water – 150 ml.(for coffee syrup)
  • Gelatin – 6 gms.
  • Vanilla essence – 1/2 tsp.
  • Cocoa powder – 3 tbsp.

Method:

  • To make coffee paste, take 1 tbsp. coffee powder in a bowl. Mix with 2 tbsp. water, make a paste and keep aside.
  • For the coffee syrup, boil water with white sugar and add 1 1/2 tbsp. coffee powder to this.
  • Take whipping cream in a mixing bowl and whip till it holds stiff peaks.
  • Take Mascarpone cheese in another bowl and cream this till it loosens up.
  • To this add caster sugar and cream well to melt the sugar completely in it.
  • Add coffee paste, vanilla essence and whip till combined.
  • Fold in the whipped cream and incorporate completely with the cheese base.
  • Soak gelatin in a little water and give a rough mix.
  • Keep this aside for a couple of minutes for the gelatin to soak all the liquid.
  • Now keep the soaked gelatin in a double boiler and whisk till it loosens up.
  • Take the liquidy gelatin off heat, and once it comes to room temperature pour into the cheese-whipped cream mix.
  • Give a thorough fold to run the gelatin all through the cream and keep this aside.
  • Now take the sponge cake and cut out circles the size of the base of assembling bowl, using a cookie cutter.
  • Place the sponge at the base of the bowl, and pour coffee syrup on top, enough to soak it completely.
  • Scoop a portion of the cheese-cream mix and layer this over the sponge.
  • Place another sponge cake over this and soak again in coffee syrup.
  • Dab another layer of cheese mix over the sponge and level the surface roughly.
  • Cover this completely with an even coating of cocoa powder.
  • Serve the Tiramisu immediately, or cover the bowl with an aluminum foil and keep refrigerated till the time to serve.

Note:

  • Do not over whip the cheese as this could split and become unusable.
  • If the sponge cake is thick, make thin even slices and then cut out roundels.
