I have completely stopped getting sweet treats from outside except when there is a craving for something specific that cannot be readily made. So every time m in short of treats, I try to make something out of my pantry supplies.
Here is the recipe for Coconut Oats Choco fudge that could be served both as a dessert as well as a snack bar. Happy baking..??
Coconut Oats Choco fudge
Ingredients:
For Base
- Unsalted Butter – 110 gms.
- Oat meal – 60 gms.
- Freshly grated coconut – 70 gms.
- All purpose flour – 100 gms.
- Brown/white sugar – 50 gms.
- Baking powder – 1/2 tsp.
- Baking soda – 1/2 tsp.
- Vanilla essence – 1 tsp.
- Salt – 1 pinch
For filling
- Dark chocolate – 200 gms.
- Unsalted butter – 40 gms.
- Egg – 1 No.
- Vanilla essence – 1 tsp.
For Garnish
- Fresh/dessicated coconut – optional
Recipe steps
- Add all the dry ingredients in a mixing bowl.
- Melt the butter n add to the dry ingredients.
- Add melted butter to dry mix along with vanilla essence and make a dough.
- Take a square cake tin and line with parchment paper.
- Transfer the dough onto the lined baking tin and level out evenly. Bake at 180C for 15 mins./ till light golden in colour.
- Meanwhile make the filling. Double boil to melt the chocolate.
- When completely melted add butter n mix well.
- Once well combined remove from heat n let it come to room temperature. Finally add egg n vanilla essence and whisk to a creamy texture.
- By now the base should be ready. Pour the chocolate filling over the base n spread evenly with a spatula.
- Bake at 180C for 20 mins./ till non- sticky to touch.
- Garnish with fresh grated/dessicated coconut n bake for yet another 5 mins. (This step is completely optional n does not impart any extra flavour to the fudge. I found the non garnished version much better.)
- Cut into fudge squares n serve.
