Easy crunchy butter cookies..

Cookies are something that I experiment with the most, as it’s the one thing I have got to have in my pantry jars. Though I have not posted many cookie recipes till date, I do have the recipes for many, scribbled down in my cooking diary. Will be sharing all of those shortly. 🙂

Today it’s a simple n Easy butter fingers recipe that I’m sharing. If you are new to baking, this would be a gud one to try your hands on. Happy baking…

Easy butter fingers recipe

Ingredients:
(Have taken 1cup=250 ml)

  • Butter – 170 gms.
  • All-purpose-flour – 2 cups
  • Caster sugar – 3/4 cup
  • Egg – 1 no.
  • Baking powder – 2 tsp.
  • Lemon rind – 1 lemon
  • Cashew nuts – Garnishing

Method:

  • Take soft butter in a bowl and cream till fluffy.
  • Add caster sugar and whip till the mix gets whitish and creamy.
  • Add egg and lemon rind to the base.
  • Whip the batter to incorporate all the ingredients well.
  • Sieve in the flour and fold into the cookie base.
  • The cookie base would be sticky at this stage. So refrigerate for 15 mins.
  • Take small gooseberry sized portions of the dough and roll them into small finger shape with your palm.
  • Layer these cookie fingers on a baking tray at a small distance apart as these cookies would almost double in their size.
  • Garnish with chopped cahews. Bake in a pre-heated oven at 180C for 15-20 mins. / till the cookies appear golden in colour.

Note:

  • The cookie dough might be quite sticky even after refrigeration. To give good shape to the cookies, wet your palm with a little water and then provide shape to each cookie ball. This will help to easily shapen the cookies.
  • The cookies would be a little soft to the touch when warm. These will harden upon cooling.
