After a month long vacation filled with fun and frolic with family n friends, back to my world of baking. 🙂 It’s in-fact during such big breaks that I realize the importance baking has taken in my day to day life. No-baking day is almost like a No-fun day. So to get back into my baking grid, today I’m sharing the recipe for an easy to bake tea-time blondie – The Walnut cinnamon blondie.

Walnut – Yet another super-food that is so nutritious that a fistful of these nuts a day to snack on is definitely the way to go. Or if you do not like the bland taste of walnuts, try incorporating this super nut into ur favorite cookie or cake recipe, the way I’ve used it in my blondie. The cinnamon used here in combination with walnut, boosts the overall flavor of the blondie.

Walnut cinnamon blondie recipe

Ingredients:
(Have taken 1cup=250 ml)

  • Butter – 115 gms.
  • All-purpose-flour – 1/2 cup
  • Caster sugar – 1/2 cup
  • Egg – 1 whole + 1 yolk
  • Walnut chopped – 1/4 cup
  • Cinnamon powder – 1/4 tsp.
  • Baking powder – 3/4 tsp.

Method:

  • Take butter in a mixing bowl.
  • Keep on a double boiler and melt the butter completely.
  • Once melted, remove from the double boiler and add sugar.
  • Whisk till the sugar is completely melted.
  • Break in 1 whole egg and a yolk along with cinnamon.
  • Whisk to completely incorporate the eggs.
  • Add in the flour and fold to combine well.
  • Finally put in the roughly chopped walnuts to the blondie batter and mix.
  • Transfer the batter into a greased and dusted square cake tin.
  • Bake in a pre-heated oven at 180C for 20-25 mins./ till a skewer inserted comes out clean.
  • Once cool, cut into squares and serve the blondies.

Note:

  • The quantity of cinnamon powder could be increased upto 1/2 tsp., if you have a liking for the flavor.
  • Try using brown sugar in place of caster sugar for a deeper flavour.
